Meet Chef Patrick
My journey all started in my mother's kitchen as a child. I would watch her prepare meals for our family and friends where she was always happy. Whether it be her famous "Sunday Sauce", Christmas Eve "7 Fishes, or just a late Saturday breakfast, I know it was very fulfilling for her to see everyone at the table happy, talking, and stuffed! In the coming years, what those gatherings clearly made me see was that food is love, and when it comes from the heart it could change a person's day. What an amazing feeling it is to create memories for the ones you love. I realized I had found my passion and knew that food would be my career. So after attending college for restaurant management, I applied and was accepted at The French Culinary Institute in 1998, (Now The International Culinary Center). It was an amazing experience, which gave me the tools to build a successful culinary career. That foundation helped me be successful through a food journey at major nyc hotels, celebrity chef driven restaurants, private restaurant startups and management, event catering venues, corporate food service, and private consulting. My career as an Executive Chef has been a wonderful and exciting 30 year odyssey which has led me to my next adventure.
Appolonia Catering is unique, custom, off premise catering and event company. It is my true love of blending the creative and the art behind my craft. The current community emphasis on farm to fork and sustainable culture ties into my career long philosophy of combining simple beautiful ingredients plus simple preparation equals happy people and success. This simplicity allows great flexibility when designing menus and events. At Appolonia Catering we can mix and match authentic cuisines to your specific taste, needs and budget.
